#1: Bike More, and a green giveaway!

0525_bike9.jpg

So much excitement for one long overdue post. Let’s see! Okay, last week I blogged about my desire to create an atmosphere of growth, with a variety of different goals. Today I want to jot a note about #1: Bike More.

For those who don’t know (99% of you) I’ve been trying to bike to work here in the City. The issue is that I’ve been on a 40 pound, 15 year old clunker of a mountain bike, which works surprisingly well for its age, but left me wanting to take “walk breaks” on 1% grades.  I walked into REI on the first day of its anniversary sale with a knowledgeable friend to check out the options, knowing I’d have to probably pay $1000 for a decent road bike, and there was a Scott Speedster, last year’s model, extra small, on clearance for $519. I bought it.

0525_bike9

That was only 10 or 11 days ago and I am having a full on love affair with my bike. (No name yet – why does everyone keep asking me this?!) I put over 50 miles on it that first weekend on a 20- and 30- mile ride with my parents along the American River Trail. It felt like I was flying, and it was so fun to share that with them as well. Also fun is just how horrible I look in bike shorts – but then again, who doesn’t?

0525_bike3

When I brought her back last week, I upgraded her for my City commute, with a rack on the back so I could start carrying my 30+ lbs of commuter drivel (huge brick of a computer, makeup, straightener, running clothes, and so on) in panniers (bike bags) instead of entirely on my back. Hello, back sweat! I feel like a whole new person.

0525_bike11

Yes, biking home from work is still uphill and not a cakewalk. Yes, biking is rather dangerous in the City and a new bike doesn’t make me any less likely to be flattened by Muni. But at the end of the day, my new bike has made me excited about something – excited about a more pleasant commute that adds an entire hour-plus of exercise to my daily routine, excited about potentially going for a tri, excited about building a new kind of strength. In The Happiness Project, the author says money CAN buy happiness… and I think this was a great purchase. It distracts me from my nagging running injuries and reminds me that even if I can’t be setting any PRs these days, I can be chasing new goals on my new two wheels.

0525_bike1

In other news – I have an exciting giveaway to share with you all! This is right in line with another one of my goals – to think much more critically about what I put into my mouth (AKA return to HEALTHY EATING!). The friendly people at Green Giant and Weight Watchers, via MyBlogSpark, sent me a gift pack with a coupon to try their new Valley Fresh Steamers line. I grabbed the Cheesy Rice and Broccoli from the grocery store a few days ago – they had me at ”Cheesy” – and cooked it in the microwave, just a couple minutes right in the bag and pow! Done.

IMG_1301

I’m occasionally skeptical about frozen foods, but have been increasingly reliant on them as my schedule has gotten crazier and crazier and time in the evening has become so precious. But I feel great about these products – good for you, healthy ingredients yet also prepared quickly! I can honestly say I will purchase these products in the future to have on hand for quick, healthy meals and use their recipes.

IMG_1303

In addition to the coupon, I was sent a pretty dope prize pack. I have had a few lunchboxes here and they’ve all kind of failed me. now I have a sturdy new one, a perfectly sized water bottle, a solar pedometer, and – this is awesome – a big salad container with a fork and knife that snap in to the lid. Perfect way to bring a salad or veggie-friendly lunch to the office. I will definitely be using this and taking advantage of any opportunity I can to eat healthier. It also included a nutrition tracker, which I’ve been using religiously since I received it last week. It’s a pretty well rounded kit for healthy eating/living.

Giant Weight Watchers Gift Pack Photo

The fun news – I get to give away another one of these sweet prize packs (Steamers coupon, insulated lunch box, sweet container with fork/knife in lid, ice pack, and pedometer) to a reader. If you are interested, please just leave a comment on this post by Monday June 4. Bonus points if you tell me something you do to eat healthy during the week, especially at lunch – I am in need for some motivation after a few too many mac and cheeses! I’ll notify the winner that evening.

Have a great day everybody!

  • Crack Bread and Christmas Coffee Giveaway

    IMG_0569.jpg

(Subtitle: The post where I talk about a really unhealthy desert and then randomly segue into giving away pounds of coffee)

I realized I should stop calling my blog a quase food blog and just call it a running, life, and baking blog. Because pretty much all of my recipes are desserts. And that’s how it should be.

Yesterday I posted about Funfetti Cake Cookies and today I’m still on a Pillsbury kick apparently. Normally I go for unprocessed everything but I figured I’d knock these two out of the park together.

The following recipe is very near and dear to me and came via my beautiful friend Tiffany. It has four ingredients, is awesome to bring to parties, and as Tiffany warned, it may cause “excessive subconscious eating.” You’ve been warned.

    Crack Bread Recipe

    Ingredients:

    • 1 cup brown sugar
    • 1 cup vanilla ice cream
    • ½ cup butter
    • 1 tube Pillsbury biscuits (the original—not the flaky layers or super butter tasting kinds)

    IMG_0569

    To make:

Melt the brown sugar, ice cream, and butter in a saucepan until it becomes uniform in color and consistency.

    IMG_0570

Pour into a baking dish (disposable ones work great if you’re bringing it to a party, like I have been)

Put the biscuits into the caramel mixture, cut into little triangles.

    IMG_0573

Bake at 350 degrees until golden brown (12-15 minutes).

Enjoy. Preferably hot and with ice cream.

    IMG_0575

Obviously NOTHING about this is healthy but it takes minutes to make and is a guaranteed crowd pleaser. Try it one day when you’re feeling lazy and thank me later. It seriously melts in your mouth. #twss

In other news… I have a bunch of coffee to give away. Godiva sponsored the Foodbuzz Festival so for a few weeks I’ve had a bunch of coffee sitting around my apartment, but I just don’t drink it. I like the ritual of coffee, but I’d rather have hot chocolate (way better for you, I may add… not) and coffee just isn’t a part of my life because caffeine does not affect me in any tangible way, so I usually just drink tea instead.

However, I know there are a lot of coffee lovers out there so for Christmas, I am giving away the following Godiva products:

    • 12 oz Chocolate Truffle ground coffee
    • 12 oz Hazelnut Crème ground coffee
    • Small bags of French Vanilla, Pumpkin Spice, and Peppermint Mocha coffees
    • Godiva chocolates
    • Godiva apron (I have one of these and use it all the time!

To enter, simply leave a comment on this post. Tell me how you can’t function without coffee, or how you like the taste, or an inane utterance that has absolutely nothing to do with the task at hand. Whatever, just leave a comment.

If you tweet a link to the coffee giveaway and tag me (@CourtPancakes) it’s an extra entry—just leave another comment and tell me you tweeted.

I’ll leave the Christmas giveaway open til Christmas and then pick a winner via Random.org.

Thank you in advance for getting these pounds of coffee off my hands. ;) It’s almost Christmas! WOO HOO!

    • In the spirit a little early… (and a sweet giveaway)

      IMG_0356.jpg

Each holiday has its appropriate time period. I get that. Halloween gets October, Thanksgiving gets November, and starting on Black Friday, it’s Christmas everywhere.

But I’m one of the many committing the overly-excited holiday faux pas. Starting with this.

      IMG_0356

Hey, when you live alone in San Francisco in an apartment the size of a closet and are single, you do what you need to do to make home feel homier. So, I am owning the fact that I have the tree up already. Suck it, haters! : )

And spent the whole day listening to the Spotify Ultimate Holiday Playlist. Note to anyone considering this: I highly recommend listening to Dominick the Donkey by Lou Monte. It will ruin holiday music for you forever.

      Spotify

After my glorious and VERY much needed Lazy Sunday, I had a big choice to make:

      Fb

Special shout-out to Angela for suggesting that baking = cross training. YES!

I decided on the perfect compromise: I’d go on a four-mile run that conveniently ended at the supermarket, where I could buy ingredients for cookies. Win-win!

      IMG_0333

I took my new shoes (Mizuno Wave Inspire 8s) out for their first spin today. My Brooks Adrenalines breathed their last breath during my 16-mile run yesterday so I knew I needed something fast. I was praying that these worked out. And it was just four miles, but they did just fine!

8:35/8:05/7:46/7:38 miles! Yes, they were downhill, but still, I rarely see anything in the 7s so I’m pleased.

      IMG_0337

Then I ended up at the grocery store for cookie ingredients! I recently received coupons from Duncan Hines via the Foodbuzz Tastemaker program, so I figured I’d come up with my own holiday-ish recipe using their products as a base. I checked online and tried to adapt the Red Velvet Crinkle Cookies recipe slightly to fit my tastes.

      The ingredients:

        • 1 box Red Velvet cake mix
        • 2 eggs
        • 6T butter, melted and cooled
        • 1t almond extract
        • 1C white chocolate chips
        • 1C powdered sugar
        • 1t cornstarch

      IMG_0339

Note to everyone: baking at my apartment is terrifying. My gas stove tends to smoke for the first ten minutes and the internal temperature is usually about 100 degrees hotter than what the dial is set to. Thank God I have an internal thermometer. But that’s why I’ve started fires…

      IMG_0341

Mixed the butter/eggs/almond extract together and then added to the cake mix box and blended. Once that was more or less smooth, I added a bajillion white chocolate chips.

      IMG_0343

Then, rolled the dough into balls and rolled them in a dish of the powdered sugar mixed with the cornstarch.

      IMG_0346

And you don’t actually need to grease the pan, don’t mind me not reading instructions for the first batch…

      IMG_0347

Put them in the oven for what was supposedly in the neighborhood of 350 for about 12 minutes and viola!

      IMG_0352

Mine didn’t have as cool of a cracked look—most of the powdered sugar seemed to disappear (sad). But numerous taste tests meant these cookies had my approval, I don’t like dry cookies, and these definitely aren’t—moist and flavorful. Yum.

      IMG_0355

I also picked up a can of DH cream cheese frosting and whipped it up with a bunch of powdered sugar to give it a more solid consistency and frosted those puppies up.

Deeeeelicious and was the perfect “milk and cookies in front of the tree” thing.

      IMG_0358

      GIVEAWAY!

I want to sweeten up your life so I’m going to send two readers three coupons each for DH products of your choosing—that’s a cake mix, a can of frosting AND an extra brownie mix or something once the cake is gone Smile

To enter, just leave a comment on this post and tell me what your favorite holiday dessert is. I’ll pick two winners on Sunday.

      Have a great week everyone!

    • BIRTHDAY WEEK Cereal/Prize Pack Giveaway!

      bigGcereal

It’s Birthday Week! And I’m celebrating with a GIVEAWAY!

What is birthday week, you may ask? Well, it’s exactly what it sounds like… celebrating your birthday for a week. And since I’m turning 25 (!!!) on Thursday and haven’t legit celebrated my birthday since I turned 21… and seeing how I don’t have another semi-significant birthday til I turn 30 (scary!), I’m enjoying this week. Celebrating starts yesterday. : )

And I want to share my good mood and happy week with a SUPER AWESOME GIVEAWAY. The lovely folks at MyBlogSpark sent me a prize pack quite a while ago and fate seemed to get in the way… the first package was lost in the mail, the second went to my office and then got left there, and then just now, FINALLY, am I posting this awesome giveaway. (Thanks for being patient with me, guys!)

      THE GIVEAWAY

I don’t know how much I’ve discussed my passion for cereal on the blog, but it suffices to say I am a bit of an addict. That’s why I was so excited when I received this package from General Mills. According to the company:

Ninety-five percent of Americans do not get enough whole grain, according to the Report of the 2010 Dietary Guidelines Advisory Committee. In fact, the average person gets a little more than half a serving of whole grain each day. That’s significantly less than the three servings recommended daily.

Every Big G cereal contains at least 8 grams of whole grain per serving, with more than 20 Big G cereals delivering 16 grams or more. (At least 48 grams of whole grain are recommended daily.) A diet high in whole grain has been found to help with diabetes and weight management, and may help reduce the risk of heart disease and certain cancers.

Frequent cereal eaters tend to have healthier body weights (and that includes people who choose sweetened cereals).Cereal eaters consume less fat, less cholesterol and more fiber than non-cereal eaters. Cereal consumption as part of an overall healthy lifestyle may play a role in maintaining a healthy body mass index.

Visit www.WholeGrainNation.com for more tips, additional information about the benefits of whole grain and how Big G cereals can be a convenient and tasty way to help you manage your weight by incorporating whole grain into your day.”

You get this super awesome prize pack:

      • An insulated lunch box! (Which I’ve been using every day—except the dayb of the week that my awesome company caters lunch… woot woot!)
      • A cereal to-go kit! (You can bring milk or yogurt in a container that also serves as an ice pack, put your dry cereal in the bottom bowl, and then mix them together whenever it’s breakfast time… AND it comes with an adorable spoon!)
      • Walking kit including water bottle, sling, and pedometer
      • Jump rope with a counter (best exercise ever. Note to self: do not attempt while inside your studio apartment with 7-foot ceilings)
      • Coupon for free box of General Mills cereal!

Basically this is pretty awesome. I’ve been using all of these things and in all honesty they have made my frantic, “portable” life even more convenient.

    • Foodie BOOK CLUB and Superfood Giveaway!

      perfect

      Dear P&P readers…

      Meet Talia.

Talia is a rad, fun-loving San Francisco dweller who enjoys baking, exercising, Disney movies, and hanging out with her awesome cat.

      Now meet Julia.

Julia is an adorable East Bay resident who recently traded in the exotic life of PR for a new exotic life of law student come fall. She loves hiking, baking, and wine.

You know me already. I’m old news.

Talia, Julia, and I met at Gracias Madre, a Mexican vegan restaurant in SF’s Mission district, for food, gossip, weak margaritas, and to kick off a new exciting event in our lives.

      Book club!

Sure, we all like to read, but what else are book clubs for? Making time for cool people to do cool things, or just to hang out. We all love food and cooking. So we are going to be alternating our monthly (ish) meetings with either 1. Going out to a cool SF (or even east bay… WOAH!) restaurant we haven’t tried yet, or 2. Meeting at one of our places to cook and bake. I think next up is molten chocolate lava cake. Who doesn’t like that?

I want to invite any cool 20-something female bay area residents who love food and meeting cool new women to join our book club! I’m serious. It’s not going to be a huge thing, but it’s going to be a fun thing and maybe there’s someone out there who thinks “hey that sounds fun!” If so, please leave me a comment or email me at pancakesandpostcards @ gmail dot com. Our first book is How to Bake a Perfect Life by Barbara O’Neal. Read about it here.

We are meeting on June 18th. It’s a quick read. Let me know if you want to join us. : )

I feel like this book club of sorts will be one of many “new beginnings” for me over the next few months. But that’s for my next post!(I’m vowing to try this thing where I post more than 2x a week and the posts aren’t a bajillion pages long each. Let’s see if it works.)

Now for a review and a giveaway!

At the end of February, someone from Sun Chlorella USA emailed me and asked if I would do a review of their projects. I said yes, and then moving to San Francisco at the exact same time, this product along with one other were lost in the mail. But what has lost has been found! I finally got the products in my hands about two weeks ago and am finally posting a review now. (I received these items for free from the company, but everything written here is my own opinion.)

I had never heard of Sun Chlorella before. It’s a whole food supplement derived from Chlorella pyrenoidosa, according to the company, which is a type of algae (!) that is super nutrient dense. It has potassium, B vitamins, amino acids, and chlorophyll. I for one tend to be super skeptical of supplements. I don’t know why, but I just am—I like the idea that you can get everything you need from a healthy, well-balanced diet. But I appreciated having this product to review this week, because it made me do some research.

The company sent me a variety of products to try: tablets, granules to mix in with drink or food, and another product called Sun Eleuthero which they say gives you a boost without caffeine’s negative effects. I also received a few bags of tea and some samples of cream made with chlorophyll.

      The verdict?

Interesting! They call it “nature’s perfect superfood,” and it definitely fits that in my mind. For one, it’s made of algae! Upon opening the bag of tablets, the first thought in my mind was “fish food.” The granules that dissolve in water are dark green and unless you love wheatgrass or green juices (notice I didn’t say green MONSTERS) you might be a bit turned off by it. But I’m sure there are smoothies and/or stir-frys or other dishes you could stir it into and be none the wiser.

The tablets are small and easy to take, the only issue I had with those is that they recommend a minimum of 15 a day. To me, that is a bit crazy. 15 to 45 pills a day for a voluntary thing? Perhaps this is why I’ve always stuck with just a multivitamin. The lazy girl’s supplement? :)

Supplements may not be my cup of tea, necessarily, but I think they are great for people who have trouble getting in the necessary intake of vitamins. Sure, in an IDEAL world we’d get everything we needed from our perfectly organic and unprocessed diets, but that just does not always happen as we know. This kind of supplement could be great for someone trying to beef up the nutrient value in their diet. My verdict: the jury is still out, but it definitely couldn’t hurt. And there’s always the placebo effect of feeling healthier, right? : ) I didn’t necessarily feel more energetic, but there’s probably a lot of external factors playing in as well.

Now you be the jury! I’ve got a pack of granules, a pack of tablets, and a pack of Sun Eleuthero (the energy one), plus some cream samples (The cream is BOMB) to give away. To enter, simply leave a comment on this post by Thursday, 5.26. I’ll send it to you and you can tell me what you think!

And I’ll also throw in some Ghiradelli chocolate from my hometown, because you know, being healthy is about moderation.

Hope everyone had a great night. Comment below to enter the giveaway, and if you’re in the area… join my book club! : )

Have you ever been in a book club? Have you read any foodie books that you would recommend?

Do you take any supplements? Why or why not?

    • Stylish Blogging on Africa Time

      ClimbingWUBoulderFar

If you don’t know from my blog already, “Africa Time” just means… late. Very late. And you think that’s normal. I’d heard before moving to Africa that it takes you a year in Africa to get used to AT (as I lovingly call it) and then a whole year BACK in the States to readjust. 11 months, one week to go before I’m punctual!

      Moving on.

We have a winner!!! Thank you so much for everyone who entered the cookbook giveaway and spread the news, I really appreciated it! I hope to do more in the future. Oh and another thanks to those of you who notified that my spam checker on wordpress was a little “overly protective”… I reapproved all your comments before drawing a number–WHY wordpress decides to filter the comments that it does, I have no idea.

So our winner is (drumroll please)…..

      Lee from College Foodie Finds!

Congrats Lee! Send me your address by email and I’ll get you your cookbook :)

The lovely Michelle from Give Me The Almond Butter tagged me in the “Stylish Blogger” award that’s been taking the blogworld by storm so I’m finally getting around to it! Thanks Michelle!

There are 4 duties to perform to accept this award:

      1.  Make a post + Link back to the person who awarded you this award.
      2.  Share 7 things about yourself.
      3.  Award 15 recently discovered great bloggers
      4.  Contact these bloggers and tell them they’ve won!

Let’s do it. Hmmm, 7 things. This could be fun.

      1. I used to go rock climbing a lot when I was in college! I was never very good but I LOVED it. I couldn’t do it in Africa (landmines…) but I hope I can get back into it now that I’m in less dangerous areas.

      2. I can quote the movie Independence Day from beginning to end. I also have a weird obsession with natural disaster movies, with Volcano ranking as my all-time favorite. Tommy Lee Jones… A volcano in LA… If you’ve never seen it… don’t worry about it.

      [source]

      3. I’m Turkish except I’m white and pale and redheaded. Couldn’t really guess it. My sister is the exotic one. I love Turkish food, though! Maybe that will make an appearance on the blog soon…

      4. I often wonder what my life would be like if it was a movie and what songs I would choose for the soundtrack. At this point I’m pretty sure that Amy Adams would play me for now and Julia Roberts when I’m a bit older. I’ll spare you guys the current soundtrack listing.

      [source]

      5. I am what I’d like to call an “organized clutter” person. I clean my room, desk, purse, etc. and within five minutes it’s already covered with some piles or clothes or what have you. I accept that it’s just who I am and only worry when I either A. no longer know where anything is or B. when I trip and fall on my face when trying to walk out to the bathroom at night. The example below, though, does NOT qualify as organized clutter.

      6. My best job ever was being a campus tour guide at UCLA. My worst job ever? Working retail at the mall. I’ve also been a lifeguard, a Resident Assistant, and an academic counselor, among other things. I’ve always wanted to be a barista and am pursuing that dream now.

      7. I just bought a djembe (African drum) with some Christmas money I got from my grammy! Now I just need to learn how to play it… I can rock the Rock Band drums, but the real thing is harder!

Now to pass on the award to bloggers I love whose responses I’d like to read…

      Alex from I Eat Asphalt

      Caroline from Sweet Caroline

      Sarah from The Pajama Chef

Matt at The Kitchen of a Runner

      Lindsay from Summit Sandwiches

      Katie from Cultural Cravings

Heather at Mile 26 and More

      Jess at Healthy Exposures

      Emily at Write Twenty Eleven

Natalia at A Side of Simple

      Angie at The Fitness Apple

Amber from  Girl With The Red Hair

If any of you have already done this, I’m really sorry! I am checking up on your blogs after I post this and didn’t cross-check to see whose already posted first. :)

      Have a fantastic day!

      What’s YOUR guilty-pleasure movie?
