One of my favorite culinary discovers of late is the Avocado-Mango Salad. Didn’t really seem like it would go together, but holy yum. I had one (aging) avocado and two small mangoes, so I decided it was time to try my hand at recreating some sort of salad side dish.
Upon cutting open my avocado, I realized I had to change my plan. The avocado has just slightly slipped past its prime—it was still fine to eat, but a little too mushy for a real salad. Change of plan: salsa! Chopped up the avocado (okay, maybe “mushed” would be a better verb), and then cut the mangoes (found a complete beetle inside one of them, but no path leading to the outside, how did it get there?? The mysteries of this world…)
Mixed the avo/mango together, and then added:
Chili powder (about 1 tsp)
Garlic powder (about 1 tsp)
Salt and pepper
A generous squirt of lemon juice
Not the prettiest salsa but COMPLETELY DELICIOUS. And so easy. Kind of like guacamole with a tropical flair. I ate it with leftover spicy potatoes and some chicken. A little red onion or cilantro would have been a nice addition, in an idealistic world. : )
